Yet another wannabe Melburnian Spanish Italian couple

Hi everybody! Greetings from Milan, Italy.
We're a Spanish - Italian couple, currently dreaming of relocating to Australia as soon as we can. This will most probably mean very far in time, as we have to face some very serious issues before we can set foot Down There.

First of all, visas. We've been together for almost 5 years, but we're pretty young (maybe a bit border line but super young inside!), we don't have stable jobs or project to form a family soon, so Working Holiday Visa seems perfect. Unfortunately, Spain and Australia don't have an agreement on that, so she wouldn't be eligible. We'll see if we can work that around.

Another interesting aspect is job market. I'm a software developer, but rather unexperienced. It would be nice to understand how hard would it be for me to find a job in one of the biggest cities. For the moment, from very far away I can see a very promising number of ads of "developer wanted", but, guess what, they're all seniors-only, juniors not allowed! My girlfriend is a Spanish teacher and can count on a rather good experience. The issue here is that Spanish doesn't seems to be as demanded as in the rest of the World and I can see no Spanish teacher in the Skilled workers wanted list.

There are many obstacles keeping us away from your beautiful country, but that just makes it more desirable! We only know we want to get there, and that sooner or later we'll fulfil it.

Where exactly in Australia? Melbourne really seems our place in the World. We'll have it on standby as long as needed, and meanwhile we'll be dying of jealousy and hating everybody on this forum

Since you are just starting out you might want to start aligning your experience with specifics of Australian job market. While economy here is fantastic employers can be at times demanding.
For Spanish teacher, this is a tough one. I can't see high demand for Spanish here as of today, however immigration from Latin America is on the rise, especially from Chile and Argentina... So there might be future here.
I would personally see if she is able to become primary or high school teacher, not necessarily in Spanish but with teaching experience it is possible to switch to say geography or something similar.
For developers there are quite a few jobs both entry level and trainee. Most of the jobs are in Sydney. There are a few in Melbourne but not as many
