off list nominations

Hi guys i am new to this forum and this is my first thread. I am going to apply in off list category of private tutor but as now my occupation is not in demand list in any province. I can apply for nomination but i am afraid if my occupation is not taken by any state. Is it compulsory for any state to choose off list occupations . I don't want to stuck up please guide how this off list criteria works what are its pros and cons ? Is it possible that i get my nominations clear but my occupation doesn't get selected by any state till then ? Please guide me guys
