Hi,
I've been married to my partner for 6 months but been together for 3 years.
I'm a Australian citizen and his Fijian he has never been to Australia.
I lost my job due to illness that prevents me from working now (don't wish to share the details but it is serious) and I really need him with me.
I've looked at all the partner visas and I just can't apply unless I have a Job. Is there another way I can apply? Or Is there no hope for us.

Why can you not apply for a partner visa due to not having a job?

Partner visas are not focused on employment status, they are focused on the genuineness of the relationship.

As Savage Flame said, you don't need to be employed to sponsor your partner for a partner visa. You only need to have sufficient evidence that the relationship is genuine.
