I’m just starting to fill out the visa application & have couple questions.

Do I say yes or no to ‘has the sponsor previously sponsored a spouse, de facto, prospective spouse or interdependent partner?’ I have sponsored my husband for his PMV hence now applying for the 820/801.

When filling in all the relationship boxes do we need to cover all our relationship or just from when the PMV was approved?

If you have not sponsored anyone else - answer no.
You should both cover all married or de facto relationships.

With the relationship boxes I meant the aspects of our relationship. do we need to do a full relationship history from when we first met again or just write about new things since the PMV grant.

I did a full relationship history for my 820 from when we first met (I applied from PMV too), and only an update for 801.
