Howdy! I'm in the US, about to apply for the subclass 300 to go to QLD. I'm going to travel to Chile (to see family) for a week about a few weeks after I submit my application. I can't seem to find if that will affect it in any way, if i need to somehow make a note of that with my application, and if I do, have yall had any experience with this? I might not go if it will cause a huge hassle with this application... seeing as how it's more important, but yeah. Advice/experiences would be much appreciated!

Going somewhere soon after your application is in should be no big deal Tiff as it can be a couple of months before you'll likely be contacted, maybe even longer and you ought to have an email address nominated for contact anyway so unless you were planning on visiting up in the Andes somewhere, shouldn't be a problem.
Some people do even decide to go to Australia whilst an offshore visa is being processed and rely on being advised that granting is close and to arrange their departure.
It is not Immi policy as onus is on the applicant to be in the right place and though I've yet to hear of one person running into trouble doing that, a person from the US posted recently re being told by Oz Immi people in Washington that she may put her visa grant in jeopardy by doing that.
Maybe she was new to the job and did not understand what is the done thing!
If you were going to do that, you could advise them on a Form 1022 - Application Forms - Numerical List - 1000 to 1381

But all superfluous if you now decide on a 462
