Question PMV - What is the process?

Hi Everyone,
I have been looking at this forum off and on for many months now and it seems the experiences have been soo different. My partner and I are nearly at our 6 months anniversary of the waiting game. He is from a high risk country (Grenada), has a one small prior criminal conviction (possession of a small amount of weed) and we met while I was on holidays. These things in itself would probably give the immi officer reason enough to stretch it out to a 12 month wait... But I do wonder if anyone else has a similar background.
And even if you don't and you didn't front load - when did you get asked to get medicals done? Were you or your partner interviewed - when did that occur? What other checks were done? As I am baffled as to this common term of 'processing'..What does that really mean. Hoping someone can provide some insight as I can't help but worry or at best just try to think positive.
I know I have included a lot of thoughts and questions - I guess I am just feeling rather frustrated - the not knowing is a killer!

My fiance didn't front load. He was assigned a case officer either the day they received his application or the day after (was couriered from Australia) can't really remember. The case officer then requested his police checked, military discharged papers (even though was never required to serve), health check and certificate of singleness. He has yet to be asked to attend an interview and we are almost at 2 months.

Not 100% sure what DIAC refer to as processing but in the government organisation I work at processing would be mean they are looking at your application ie. you have been assigned a case officer. It would say processing but the case officer may not be actively looking at it - they may be waiting on information.

I know the frustration, it would be better to have better information ie. awaiting form 80, awaiting medicals etc

Don't quote me on this but apparently if they require further investigation or are in question of the person applying for the visa will request an interview. If no interview is requested it usually is a good thing.
