got sponsorship offer, not sure what chances we have

Good day mates!

I couldn't find similar case from this forum.
At the moment me and my girlfriend (both 24 years old from Europe) are holding working holiday visa and we've 6 months left. Our current employer wants us to stay for longer and is ready to sponsor us, because we are more than very valuable workers, production and quality have been increased since we work there, we are basically team-leaders/supervisors, we know the system/work and future is bright.

The good thing is that one sponsored worker already (about 4 years, floor-manager position) works in this company.
The sad thing is that.. we (me and my girlfriend) don't have educational diploma and we are not sure if our working history is eligible to fulfill the requirements for sponsored visa:

- I have studied 'food technology and production' at university, but I haven't graduated
- I have worked as a supervisor for 1 year, but in different industry
- we have worked as a laborer + team leaders nearly 1 year in our current work place.

What do you guys suggest?
Do we have any chances? Or should one of us should take some short course (producing management? what else?).
The company is in food production industry, supplying woolworths, coles, aldi and many markets, nationally very good company.
At the moment we would fill the supervisor positions and by learning there's management positions available.

We are more than happy if you can give us advice that would help us to stay longer and make career happen.
