Have you been working or have any skills that you could make you eligible for an employer sponsorship if you can find an eligible and agreeable employer.
But if you do not meet the family visa requirement, your other option is really only something in the skilled stream or student visas and that can be a very expensive process and still not give any certainty about staying.

If you have eligibility for sponsorship you could try looking for other employers to see if you can find a new employer and sponsor.

How much time till your visa expires Gurpreet? Maybe if your employer realises that his sponsorship is your only option of staying in Australia, he will reconsider. As you say, it is a good company....

You do need a minimum of 12 months experience within last 24 in your occupation or another on the SOL to be eligible for an independent skilled visa and it would be an offshore visa you would need to apply for and there would be no bridging visa.
I would not think that you would have grounds for a refugee visa.
About all you may be able to do to delay departure would be to see if you can get a tourist visa and in that time see if you can find an employer to sponsor you.
If you do and your tourist visa has a No Further Stay condition on it you will need to take a trip out of Australia to apply for the employer sponsor visa and remain outside until it is granted and then return.
