SA have announced their interim list but the SMPs have not yet been set up.
When they are, I'd imagine the application process for the state sponsorship will not be a great deal different to what it has been in the past and you'll just need to check the state site.

You'll see from General skilled migration :: Make The Move that SA are having a bit of an each way bet in jumping the gun some on the SMP and offering the opportunity for potential applicants to join them.
Start up an application and follow the system if you desire to do so.

I applied DIAC under SA state sponsorship. Now I know we are under 3rd category but if SA announce SMP soon, will our category changed to 2nd category automatically or will we have to do something?

And also I wanna ask one more question. All family and stated sponsored is under 176 visa. But what's the main difference between two sponsored visas? Timelines?

Re whether an existing state sponsorship becomes SMP will other than the occupation being on their SMP be hopefully clarified when the SMPs ar officially commenced.
As to 176 differences a 176SMP will be Category 2 whereas others will either be Category 3 or 4 - Client Service Charter

I think I cannot clarify my question. I know after SMPs will be clarified, the category will be Category-2. But we applied now on category-3. Now we will be assesed in Category-3. If the SPMs will be announced while our process is still continuing, then our application will be assessed in category-2 or category-3 group? Is it an automatic change in DIAC's side?

And also I know that if you have relatives in Au you can apply for 176 visa too. Is there any difference between this 176 visa and state sponsored 176 visa?

If you already have your visa application in based on a standard 176 state sponsorship I suspect it will be treated as such though no crystal ball on what may be announced from Immi however they rarely predate processes in regard to having a visa application process changed.
I think if you have a read of the Immi processing priority information you will find that apart from SMPs, state sponsorships and family sponsorships will with an occupation on SOL#3 be treated as priority #3.
